Laksa
Laksa is a spicy and aromatic noodle soup popular in Southeast Asia, particularly in Malaysia and Singapore.
Ingredients - Serves 4
- Lime wedges - 4
- Hard-boiled eggs - 4, halved
- Fresh cilantro - 1/4 cup, chopped
- Bean sprouts - 1 cup
- Lime juice - 2 tablespoons
- Fish sauce - 2 tablespoons
- Laksa paste - 3 tablespoons
- Chicken broth - 4 cups
- Coconut milk - 400ml
- Shrimp - 200g, peeled and deveined
- Chicken breast - 2, sliced
- Rice noodles - 200g
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pot, heat some oil over medium heat. Add the laksa paste and cook for 2-3 minutes until fragrant.
- Add the chicken breast and shrimp to the pot and cook until they are cooked through.
- Pour in the coconut milk and chicken broth. Bring to a simmer and let it cook for 10 minutes.
- Stir in the fish sauce and lime juice. Taste and adjust the seasoning if needed.
- Divide the cooked rice noodles among serving bowls. Ladle the hot laksa broth over the noodles.
- Top each bowl with bean sprouts, chopped cilantro, and halved hard-boiled eggs.
- Serve the laksa hot with lime wedges on the side.
