Labskaus
Labskaus is a traditional Northern German dish made from corned beef, potatoes, and onions. It's a hearty and comforting meal, perfect for cold winter nights.

- Eggs - 4

- Pickled gherkins - 4
- Beetroot - 1 can
- Butter - 2 tablespoons
- Onions - 2 medium
- Potatoes - 4 large
- Corned beef - 500 grams
Let's Get Started
- Peel and dice the potatoes and onions.
- In a large pot, melt the butter and sauté the onions until they are translucent.
- Add the corned beef and potatoes to the pot and cover with water. Bring to a boil, then reduce the heat and simmer for about an hour, until the potatoes are soft.
- Drain the beetroot and add it to the pot. Use a potato masher to mash everything together until it's a rough puree.
- Season with salt and pepper to taste.
- Fry the eggs in a separate pan.
- Serve the Labskaus hot, topped with a fried egg and a pickled gherkin on the side.
