Let's Get Started

  1. Peel and dice the potatoes and onions.
  2. In a large pot, melt the butter and sauté the onions until they are translucent.
  3. Add the corned beef and potatoes to the pot and cover with water. Bring to a boil, then reduce the heat and simmer for about an hour, until the potatoes are soft.
  4. Drain the beetroot and add it to the pot. Use a potato masher to mash everything together until it's a rough puree.
  5. Season with salt and pepper to taste.
  6. Fry the eggs in a separate pan.
