Koshari
Koshari is a traditional Egyptian dish made with rice, lentils, pasta, and a flavorful tomato sauce.
Ingredients - Serves 6
- White vinegar - 2 tablespoons
- Chopped cilantro - 1/4 cup
- Chopped parsley - 1/4 cup
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Red pepper flakes - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Tomato paste - 2 tablespoons
- Canned tomatoes - 1 can (14 oz)
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Pasta (e.g., macaroni or penne) - 1 cup
- Lentils - 1 cup
- Rice - 1 cup
Let's Get Started
- Cook the rice according to package instructions. Set aside.
- Cook the lentils in a pot of boiling water until tender, about 20 minutes. Drain and set aside.
- Cook the pasta according to package instructions. Drain and set aside.
- In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
- Add the canned tomatoes, tomato paste, cumin, coriander, red pepper flakes, and salt to the saucepan. Stir well to combine. Simmer for 15 minutes, stirring occasionally.
- To serve, layer the cooked rice, lentils, and pasta in a serving dish. Top with the tomato sauce.
- Garnish with chopped parsley and cilantro. Drizzle with white vinegar.
- Serve hot and enjoy!
