Collard Greens
A traditional Southern dish, these collard greens are simmered with bacon and seasonings until tender.
Ingredients - Serves 6
- Salt and pepper - To taste
- Sugar - 1 teaspoon
- White vinegar - 2 tablespoons
- Chicken broth - 2 cups
- Collard greens - 2 pounds, washed and chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Bacon - 4 slices, chopped
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy.
- Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
- Add the collard greens to the pot and cook until they start to wilt.
- Add the chicken broth, vinegar, sugar, salt, and pepper to the pot. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the greens are tender.
- Adjust the seasoning if necessary, then serve the greens with the cooking liquid.
