Ingredients - Serves 6
- Salt and pepper - To taste
- Oregano - 1 tablespoon
- Lemon - 1, juiced
- Olive oil - 1/2 cup
- Lamb lungs - 500 grams
- Lamb heart - 500 grams
- Lamb liver - 500 grams
- Lamb or goat intestines - 1.5 kilograms
Let's Get Started
- Clean the intestines thoroughly and soak in water with lemon juice for 1 hour.
- Cut the liver, heart, and lungs into small pieces and season with salt, pepper, and oregano.
- Thread the pieces onto a long skewer, alternating with pieces of intestine.
- Wrap the entire skewer with the remaining intestines, securing with kitchen twine if necessary.
- Preheat a grill to medium heat and brush the kokoretsi with olive oil.
- Grill for about 2 hours, turning frequently and basting with more olive oil, until the kokoretsi is crispy and golden brown.
- Let rest for a few minutes before slicing and serving.
