  2. Cut the liver, heart, and lungs into small pieces and season with salt, pepper, and oregano.
  3. Thread the pieces onto a long skewer, alternating with pieces of intestine.
  4. Wrap the entire skewer with the remaining intestines, securing with kitchen twine if necessary.
  5. Preheat a grill to medium heat and brush the kokoretsi with olive oil.
  6. Grill for about 2 hours, turning frequently and basting with more olive oil, until the kokoretsi is crispy and golden brown.
  7. Let rest for a few minutes before slicing and serving.
