Kleftiko
Kleftiko is a traditional Greek slow-cooked lamb dish with garlic, lemon, and herbs. The lamb is marinated and then slow-cooked until tender.
Ingredients - Serves 4
- Feta cheese - 200 grams, crumbled
- Potatoes - 4 large, cut into chunks
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Rosemary - 2 sprigs, fresh
- Oregano - 2 tablespoons, dried
- Lemon - 1, juiced
- Garlic - 6 cloves, minced
- Lamb shoulder - 1.5 kg, boneless
Let's Get Started
- In a large bowl, combine the lamb, garlic, lemon juice, oregano, rosemary, olive oil, salt, and pepper. Cover and marinate for at least 2 hours, or overnight in the refrigerator.
- Preheat your oven to 160°C (320°F).
- Place the marinated lamb in a roasting pan and add the potatoes around it.
- Cover the pan with foil and bake for 4 hours, or until the lamb is tender and the potatoes are cooked.
- Remove the foil, increase the oven temperature to 200°C (390°F), and bake for another 30 minutes, or until the lamb is browned.
- Sprinkle the feta cheese over the lamb and potatoes and serve.
