Kinpira Renkon is a classic Japanese side dish made from lotus root that is stir-fried and seasoned with soy sauce and mirin. It's a deliciously crunchy and slightly sweet dish that pairs well with rice.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, for garnish
- Red pepper flakes - A pinch
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Lotus root - 1, peeled and thinly sliced
Let's Get Started
- Soak the sliced lotus root in water for 5 minutes to remove any bitterness.
- Heat the sesame oil in a pan over medium heat.
- Drain the lotus root and add it to the pan. Stir-fry for about 5 minutes, until the slices become translucent.
- Add the soy sauce, mirin, sugar, and red pepper flakes. Continue to stir-fry for another 5 minutes, until the lotus root is well coated and the sauce has thickened.
- Remove from heat and sprinkle with sesame seeds before serving.
