Kinpira Gobo
Kinpira Gobo is a classic Japanese dish that combines two root vegetables, gobo (burdock root) and carrot, sautéed and then simmered in a sweet and salty sauce.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, toasted
- Sugar - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame oil - 2 tablespoons
- Carrot - 1 large, thinly sliced
- Gobo (burdock root) - 1, thinly sliced
Let's Get Started
- Rinse the gobo and carrot under cold water. Slice them into thin matchsticks.
- Heat the sesame oil in a pan over medium heat. Add the gobo and carrot and sauté until they start to soften.
- Add the soy sauce, mirin, and sugar to the pan. Stir well to combine.
- Cover the pan and reduce the heat to low. Let it simmer for about 10 minutes, or until the vegetables are tender.
- Remove the lid and increase the heat to high. Stir-fry for another 2-3 minutes, or until the liquid has evaporated.
- Sprinkle with toasted sesame seeds before serving.
