Kimchi Bokkeumbap
Kimchi Bokkeumbap is a popular Korean fried rice dish made with kimchi, rice, and various vegetables.
Ingredients - Serves 2
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Frozen peas - 1/2 cup
- Carrot - 1, diced
- Onion - 1, diced
- Bacon - 4 slices, chopped
- Kimchi - 1 cup, chopped
- Cooked rice - 2 cups
Let's Get Started
- Heat a large skillet or wok over medium heat.
- Add the chopped bacon and cook until crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, carrot, and frozen peas. Cook until the vegetables are tender.
- Add the chopped kimchi and cooked rice to the skillet. Stir well to combine.
- Add the soy sauce and sesame oil. Season with salt and pepper to taste.
- Push the rice mixture to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked.
- Mix the scrambled eggs with the rice mixture.
- Add the crispy bacon back to the skillet and stir to combine.
- Garnish with chopped green onions.
- Serve hot and enjoy!
