Khuurga Khatan
Khuurga Khatan is a traditional Mongolian dish made with lamb, vegetables, and spices.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Potatoes - 4, peeled and diced
- Carrots - 2, sliced
- Onion - 1 large, chopped
- Lamb shoulder - 1 kg, cut into cubes
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion, minced garlic, and grated ginger. Cook for 2-3 minutes until fragrant.
- Add the cumin, coriander, salt, and pepper. Stir well to coat the lamb and vegetables with the spices.
- Add the sliced carrots, diced potatoes, and water. Bring to a boil, then reduce the heat to low.
- Cover the pot and simmer for 1.5 hours, or until the lamb is tender and the vegetables are cooked through.
- Taste and adjust the seasoning if needed.
- Serve hot, garnished with fresh cilantro.
