Keto Chicken and Broccoli Stir Fry

Ingredients - Serves 4
- Avocado oil (or your preferred cooking oil) - 2 tablespoons
- Salt and pepper - To taste
- Erythritol (or your preferred keto-friendly sweetener) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Broccoli - 2 cups, florets
- Chicken breast - 2 breasts, sliced
Let's Get Started
- In a bowl, marinate the sliced chicken breast with soy sauce, grated ginger, minced garlic, salt, and pepper. Let it sit for 10 minutes.
- Heat avocado oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli florets and stir fry for 3-4 minutes, until they are tender-crisp.
- Return the cooked chicken to the skillet with the broccoli.
- Add sesame oil and erythritol (or your preferred keto-friendly sweetener) to the skillet. Stir fry for an additional 2 minutes.
