Keto Cauliflower Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic, diced onion, and diced carrots. Cook until the vegetables are tender, about 5 minutes.
  3. Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  4. Add the cauliflower rice and peas to the skillet. Cook for 3-4 minutes, until the cauliflower rice is tender.
  5. Stir in the soy sauce and sesame oil. Season with salt and pepper to taste.
  6. Remove from heat and garnish with chopped green onions.
  7. Serve hot and enjoy!
