Keto Cauliflower Fried Rice
This keto-friendly version of fried rice replaces traditional rice with cauliflower rice for a low-carb and delicious alternative.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 2, beaten
- Peas - 1/2 cup
- Carrots - 2 medium, diced
- Onion - 1 small, diced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cauliflower - 1 head, riced
Let's Get Started
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic, diced onion, and diced carrots. Cook until the vegetables are tender, about 5 minutes.
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Add the cauliflower rice and peas to the skillet. Cook for 3-4 minutes, until the cauliflower rice is tender.
- Stir in the soy sauce and sesame oil. Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions.
- Serve hot and enjoy!
