Kefir and Potato Soup
This creamy and comforting soup combines the tanginess of kefir with the heartiness of potatoes.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Kefir - 1 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Potatoes - 4 medium, peeled and diced
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Stir in the kefir and chopped dill. Season with salt and pepper to taste.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
