Ingredients - Serves 6

Let's Get Started

  1. In a large pot, boil the oxtail and tripe in water for about 1 hour or until tender. Drain and set aside.
  2. In a separate pot, heat the cooking oil and sauté the garlic and onion until fragrant.
  3. Add the boiled oxtail and tripe to the pot and cook for a few minutes.
  4. Add the beef broth, peanut butter, annatto powder, and fish sauce. Stir well to combine.
  5. Simmer for about 2 hours or until the meat is tender and the flavors have melded together.
  6. Add the eggplant, string beans, and bok choy. Cook for another 5 minutes or until the vegetables are tender.
  7. Season with salt and ground black pepper to taste.
  8. Serve hot with steamed rice and shrimp paste on the side.
