Kare Kare
Kare-Kare is a traditional Filipino stew made with oxtail, tripe, and vegetables in a rich peanut sauce.
Ingredients - Serves 6
- Shrimp paste - For serving
- Cooking oil - 2 tablespoons
- Salt - To taste
- Ground black pepper - 1/2 teaspoon
- Beef broth - 4 cups
- Fish sauce - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Annatto powder - 1 tablespoon
- Peanut butter - 1/2 cup
- Bok choy - 1 bunch, chopped
- String beans - 1/2 pound, cut into 2-inch pieces
- Eggplant - 2 pieces, sliced
- Tripe - 1 pound
- Oxtail - 2 pounds
Let's Get Started
- In a large pot, boil the oxtail and tripe in water for about 1 hour or until tender. Drain and set aside.
- In a separate pot, heat the cooking oil and sauté the garlic and onion until fragrant.
- Add the boiled oxtail and tripe to the pot and cook for a few minutes.
- Add the beef broth, peanut butter, annatto powder, and fish sauce. Stir well to combine.
- Simmer for about 2 hours or until the meat is tender and the flavors have melded together.
- Add the eggplant, string beans, and bok choy. Cook for another 5 minutes or until the vegetables are tender.
- Season with salt and ground black pepper to taste.
- Serve hot with steamed rice and shrimp paste on the side.
