- Hard-boiled eggs - 4
- Fresh vegetables (cucumber, bean sprouts, long beans, etc.) - To taste
- Lime juice - 1 tablespoon
- Palm sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Red curry paste - 2 tablespoons
- Coconut milk - 2 cups
- Rice vermicelli - 200 grams
Let's Get Started
- Soak the rice vermicelli in warm water for 10 minutes, then drain and set aside.
- In a pot, bring the coconut milk to a boil. Add the red curry paste and stir until well combined.
- Add the fish sauce, palm sugar, and lime juice. Stir until the sugar is dissolved.
- Add the rice vermicelli to the pot and stir until it's well coated with the sauce.
- Serve the rice vermicelli with fresh vegetables and a hard-boiled egg on top.
