Kale Caesar Salad with Grilled Chicken
A healthy and hearty salad with a tangy Caesar dressing, crunchy croutons, and perfectly grilled chicken.
Ingredients - Serves 4
- Croutons - 1 cup
- Parmesan cheese - 1/4 cup, grated
- Caesar dressing - 1/2 cup
- Kale - 1 bunch, stemmed and chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Preheat the grill to medium heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through. Let it rest for a few minutes, then slice it.
- In a large bowl, combine the chopped kale, Caesar dressing, and grated Parmesan. Toss until well coated.
- Add the sliced grilled chicken and croutons to the salad and toss again.
- Serve the salad immediately, with extra Parmesan on top if desired.
