Kale and White Bean Soup
A hearty and healthy soup packed with kale and white beans, perfect for a chilly day.
Ingredients - Serves 4
- Salt and pepper - To taste
- Kale - 1 bunch, stems removed and leaves chopped
- Chicken or vegetable broth - 4 cups
- Cannellini beans - 1 can, drained and rinsed
- Celery - 2 stalks, chopped
- Carrot - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the beans and broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes.
- Add the kale and cook until it is wilted and tender, about 5 minutes.
- Season with salt and pepper to taste.
