Kale and Lentil Stuffed Sweet Potatoes

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F. Prick the sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes, or until tender.
  2. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the kale to the skillet and cook until wilted, about 5 minutes. Stir in the lentils and season with salt and pepper.
  4. Cut a slit in the top of each baked sweet potato and gently press the sides to open. Fill with the kale and lentil mixture.
  5. Top each sweet potato with crumbled feta cheese before serving.
