Kale and Lentil Stuffed Sweet Potatoes
A hearty and healthy dish of baked sweet potatoes filled with a savory mix of kale and lentils.
Ingredients - Serves 4
- Feta cheese - 1/2 cup, crumbled
- Salt and pepper - To taste
- Lentils - 1 cup, cooked
- Kale - 1 bunch, stemmed and chopped
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Sweet potatoes - 4 medium
Let's Get Started
- Preheat the oven to 400°F. Prick the sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the kale to the skillet and cook until wilted, about 5 minutes. Stir in the lentils and season with salt and pepper.
- Cut a slit in the top of each baked sweet potato and gently press the sides to open. Fill with the kale and lentil mixture.
- Top each sweet potato with crumbled feta cheese before serving.
