Kale and Chourico Soup

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chourico and cook until browned, about 5 minutes. Remove the chourico with a slotted spoon and set aside.
  3. Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
  4. Add the potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  5. Add the kale and cooked chourico to the pot. Simmer until the kale is wilted, about 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
