Kale and Chourico Soup
A hearty and flavorful soup made with spicy chourico sausage, kale, and potatoes.
Ingredients - Serves 6
- Salt and pepper - To taste
- Kale - 1 bunch, chopped
- Chicken broth - 6 cups
- Potatoes - 4 medium, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Chourico sausage - 1 pound, sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chourico and cook until browned, about 5 minutes. Remove the chourico with a slotted spoon and set aside.
- Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
- Add the potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Add the kale and cooked chourico to the pot. Simmer until the kale is wilted, about 5 minutes.
- Season with salt and pepper to taste. Serve hot.
