Kaiserschmarrn
Kaiserschmarrn is a traditional Austrian dessert made with fluffy shredded pancakes, served with powdered sugar and fruit compote.
Ingredients - Serves 4
- Fruit compote - For serving
- Powdered sugar - For dusting
- Butter - 4 tablespoons
- Eggs - 4
- Milk - 1 cup
- Salt - 1/4 teaspoon
- Sugar - 2 tablespoons
- All-purpose flour - 1 cup
Let's Get Started
- In a large bowl, whisk together the flour, sugar, and salt.
- In a separate bowl, whisk together the milk and eggs.
- Gradually pour the milk mixture into the flour mixture, whisking until smooth.
- Heat 2 tablespoons of butter in a large non-stick skillet over medium heat.
- Pour half of the batter into the skillet and cook until the bottom is golden brown, about 3-4 minutes.
- Flip the pancake and cook the other side until golden brown, another 3-4 minutes.
- Remove the pancake from the skillet and tear it into small pieces using two forks.
- Repeat the process with the remaining batter.
- In the same skillet, melt the remaining 2 tablespoons of butter.
- Return the torn pancakes to the skillet and cook for an additional 2-3 minutes, stirring occasionally, until they are lightly browned and crispy.
- Serve the Kaiserschmarrn dusted with powdered sugar and accompanied by fruit compote.
