Kachori
Kachori is a spicy snack, originating from the Indian subcontinent, and common in places with Indian diaspora and other South Asian diaspora. This delicious deep-fried snack is stuffed with a spicy filling of yellow moong dal and spices.
Ingredients - Serves 4
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Cumin seeds - 1 teaspoon, crushed
- Fennel seeds - 1 teaspoon, crushed
- Yellow moong dal - 1/2 cup, soaked and ground to a paste
- Vegetable oil - 4 tablespoons for dough, more for deep frying
- All-purpose flour - 2 cups
Let's Get Started
- In a bowl, mix the flour and 4 tablespoons of oil. Add water gradually to make a soft dough. Cover and keep aside for 30 minutes.
- Heat 2 tablespoons of oil in a pan. Add the crushed fennel and cumin seeds. Saute for a minute.
- Add the ground moong dal to the pan and cook on low heat until the dal is golden brown and fragrant.
- Add the garam masala, red chili powder, and salt to the pan. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
- Divide the dough into small balls. Roll each ball into a small circle, place a spoonful of the dal mixture in the center, and seal the edges to form a ball.
- Heat oil for deep frying. Drop the kachoris in the hot oil and fry on low heat until golden brown and crisp.
- Drain on paper towels to remove excess oil. Serve hot with chutney or ketchup.
