Jokpyeon
Jokpyeon is a traditional Korean rice cake made with glutinous rice flour and filled with sweet red bean paste.
Ingredients - Serves 12
- Cornstarch - 2 tablespoons
- Salt - 1/4 teaspoon
- Sugar - 1/4 cup
- Sweet red bean paste - 1 cup
- Water - 1 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the glutinous rice flour, sugar, and salt.
- Gradually add water while stirring until a smooth dough forms.
- Divide the dough into 12 equal portions and shape each portion into a ball.
- Flatten each dough ball and place a spoonful of sweet red bean paste in the center.
- Fold the edges of the dough over the filling and seal tightly.
- Bring a pot of water to a boil and add the jokpyeon. Cook for about 10 minutes or until they float to the surface.
- Remove the jokpyeon from the water and let them cool.
- In a separate bowl, mix cornstarch with water to make a slurry.
- Dip each jokpyeon into the cornstarch slurry to coat lightly.
- Steam the jokpyeon for 10 minutes to set the coating.
- Serve the jokpyeon as a sweet treat or dessert.
