Jidori Chicken Roulade

Ingredients - Serves 4
- Chicken stock - 1 cup
- White wine - 1/2 cup
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Salt and pepper - To taste
- Jidori chicken breasts - 4, boneless and skinless
Let's Get Started
- Preheat the oven to 375°F.
- Season the chicken breasts with salt, pepper, garlic, thyme, and rosemary.
- Roll the chicken breasts tightly and secure with kitchen twine.
- Heat the olive oil and butter in a large oven-safe skillet over medium heat.
- Add the chicken roulades to the skillet and sear on all sides until golden brown.
- Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the skillet.
- Add the chicken stock to the skillet and bring to a simmer.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through.
- Remove the chicken from the oven and let rest for a few minutes before slicing and serving.
