Istrian Stew
This hearty Istrian stew is a traditional Croatian dish made with tender beef, vegetables, and aromatic herbs.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Bay leaves - 2
- Beef broth - 4 cups
- Red wine - 1 cup
- Garlic - 3 cloves, minced
- Tomato paste - 2 tablespoons
- Red bell pepper - 1, diced
- Potatoes - 3 medium, diced
- Carrots - 2 medium, sliced
- Onion - 1 large, chopped
- Beef stew meat - 1.5 pounds, cubed
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the beef stew meat and cook until browned on all sides.
- Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Stir in the tomato paste and cook for another minute.
- Pour in the red wine and let it simmer for a few minutes to reduce.
- Add the carrots, potatoes, red bell pepper, bay leaves, dried thyme, salt, and pepper. Stir well to combine.
- Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for about 2 hours, or until the beef is tender and the flavors have melded together.
- Remove the bay leaves before serving.
