  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Stir in the tomato paste and cook for another minute.
  5. Pour in the red wine and let it simmer for a few minutes to reduce.
  6. Add the carrots, potatoes, red bell pepper, bay leaves, dried thyme, salt, and pepper. Stir well to combine.
  7. Pour in the beef broth and bring to a boil.
  8. Reduce the heat to low, cover the pot, and let the stew simmer for about 2 hours, or until the beef is tender and the flavors have melded together.
  9. Remove the bay leaves before serving.
