Insalata Di Farro
A refreshing and hearty Italian salad made with farro, fresh vegetables, and a tangy vinaigrette.
Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Basil leaves - 1/4 cup, chopped
- Red onion - 1/2, thinly sliced
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Salt - 1/2 teaspoon
- Water - 3 cups
- Farro - 1 cup
Let's Get Started
- Rinse the farro under cold water until the water runs clear.
- In a medium pot, bring the water and salt to a boil. Add the farro, reduce the heat to low, cover, and simmer for 30 minutes, or until the farro is tender.
- Drain the farro and let it cool.
- In a large bowl, combine the cooled farro, cherry tomatoes, cucumber, red onion, and basil.
- In a small bowl, whisk together the olive oil, lemon juice, and black pepper.
- Pour the vinaigrette over the salad and toss to combine.
- Serve the salad chilled or at room temperature.
