Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 200°C. Prick the eggplants with a fork and roast in the oven for about 45 minutes, or until soft.
  2. Peel the eggplants and mash the pulp with a fork.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes.
  4. Gradually whisk in the milk. Bring to a boil, then reduce the heat and simmer, stirring constantly, until the sauce thickens.
  5. Stir in the mashed eggplant and Parmesan cheese. Season with salt and pepper.
  6. In a separate pan, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
  7. Add the onion and garlic to the pan and cook until soft.
  8. Stir in the tomato paste and beef broth. Bring to a boil, then reduce the heat and simmer, covered, for about 1 hour, or until the lamb is tender.
  9. Serve the lamb stew over the eggplant puree.
