Hunkar Begendi
Hunkar Begendi, or Sultan's Delight, is a traditional Turkish dish made with lamb stew served over a creamy roasted eggplant puree.
Ingredients - Serves 4
- Salt and pepper - To taste
- Beef broth - 2 cups
- Tomato paste - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Parmesan cheese - 1/2 cup, grated
- Milk - 2 cups
- Flour - 2 tablespoons
- Butter - 2 tablespoons
- Eggplant - 2 large
- Lamb - 500 grams, cubed
Let's Get Started
- Preheat the oven to 200°C. Prick the eggplants with a fork and roast in the oven for about 45 minutes, or until soft.
- Peel the eggplants and mash the pulp with a fork.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes.
- Gradually whisk in the milk. Bring to a boil, then reduce the heat and simmer, stirring constantly, until the sauce thickens.
- Stir in the mashed eggplant and Parmesan cheese. Season with salt and pepper.
- In a separate pan, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the onion and garlic to the pan and cook until soft.
- Stir in the tomato paste and beef broth. Bring to a boil, then reduce the heat and simmer, covered, for about 1 hour, or until the lamb is tender.
- Serve the lamb stew over the eggplant puree.
