Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Salsa - 1 cup
- Corn tortillas - 4
- Eggs - 4
- Canned black beans - 1 can, drained and rinsed
- Red bell pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onions, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the black beans and cook until heated through, about 5 minutes.
- In a separate skillet, fry the eggs to your desired level of doneness.
- Heat the tortillas in a dry skillet until warm and pliable.
- To serve, place a tortilla on each plate, top with the bean mixture, a fried egg, and a spoonful of salsa.
- Garnish with chopped cilantro and season with salt and pepper to taste.
