Hu Tieu
Hu Tieu is a popular Vietnamese noodle soup dish made with a flavorful broth, rice noodles, and various toppings.
Ingredients - Serves 4
- Ground black pepper - To taste
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Soy sauce - 1 tablespoon
- Fish sauce - 2 tablespoons
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Green onions - 1/4 cup, chopped
- Bean sprouts - 1 cup
- Chicken breast - 8 oz, thinly sliced
- Shrimp - 8 oz, peeled and deveined
- Pork bones - 1 lb
- Rice noodles - 8 oz
Let's Get Started
- In a large pot, add the pork bones and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes to make the broth.
- While the broth is simmering, prepare the toppings by cooking the shrimp and chicken breast in a separate pot of boiling water until cooked through. Drain and set aside.
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a small bowl, mix together the fish sauce, soy sauce, minced garlic, grated ginger, and ground black pepper to make the sauce.
- Once the broth is ready, strain it to remove the pork bones. Return the broth to the pot and bring it back to a simmer.
- To serve, divide the cooked rice noodles among bowls. Top with shrimp, chicken, bean sprouts, green onions, and cilantro.
- Pour the hot broth over the noodles and toppings in each bowl.
- Serve hot with lime wedges and the prepared sauce on the side.
