Hot and Sour Soup
A traditional Chinese soup packed with the contrasting flavors of both spice and sourness.
Ingredients - Serves 4
- Sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Eggs - 2, beaten
- Bamboo shoots - 1/2 cup, sliced
- Shiitake mushrooms - 1 cup, sliced
- Firm tofu - 1 cup, diced
- Chili garlic sauce - 1 tablespoon
- White pepper - 1/2 teaspoon
- Rice vinegar - 1/4 cup
- Soy sauce - 1/4 cup
- Chicken broth - 4 cups
Let's Get Started
- In a large pot, combine the chicken broth, soy sauce, rice vinegar, white pepper, and chili garlic sauce. Bring to a simmer over medium heat.
- Add the tofu, mushrooms, and bamboo shoots to the pot. Continue to simmer for 10 minutes.
- Slowly pour the beaten eggs into the soup, stirring constantly to create egg ribbons.
- Stir in the green onions and sesame oil.
- Serve the soup hot, garnishing with additional green onions if desired.
