Hijiki Salad
A traditional Japanese side dish made from hijiki seaweed, vegetables, and tofu in a savory-sweet dressing.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Sesame oil - 1 tablespoon
- Sugar - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Firm tofu - 1/2 cup, cubed
- Edamame - 1/2 cup, shelled
- Carrot - 1, julienned
- Dried hijiki seaweed - 1/2 cup
Let's Get Started
- Soak the hijiki in warm water for 15 minutes, then drain and rinse.
- In a large pan, heat the sesame oil over medium heat.
- Add the carrot and cook for 2-3 minutes, until slightly softened.
- Add the hijiki, edamame, and tofu to the pan and stir to combine.
- In a small bowl, mix together the soy sauce, mirin, and sugar until the sugar is dissolved.
- Pour the sauce over the hijiki mixture and stir to combine.
- Cover the pan and simmer for 20 minutes, until the hijiki is tender.
- Sprinkle with sesame seeds before serving.
