Herbed Quinoa Pilaf
A healthy and delicious side dish packed with herbs and vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh herbs (parsley, thyme, rosemary) - 1 tablespoon each, finely chopped
- Bell pepper - 1, finely chopped
- Carrot - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 1 tablespoon
- Vegetable broth - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa to the boiling broth, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.
- Add the onion, garlic, carrot, and bell pepper to the skillet and cook until the vegetables are soft, about 5 minutes.
- Stir in the cooked quinoa and the chopped herbs. Season with salt and pepper.
- Serve the herbed quinoa pilaf warm.
