Herbed Quinoa Pilaf

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Add the quinoa to the boiling broth, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  4. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.
  5. Add the onion, garlic, carrot, and bell pepper to the skillet and cook until the vegetables are soft, about 5 minutes.
  6. Stir in the cooked quinoa and the chopped herbs. Season with salt and pepper.
  7. Serve the herbed quinoa pilaf warm.
