Herbed Potato Rosti

  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a bowl, mix the potatoes, herbs, salt, and pepper.
  3. Heat the butter and oil in a non-stick frying pan over medium heat.
  4. Add the potato mixture to the pan, pressing it down firmly with a spatula.
  5. Cook for about 15 minutes, or until the bottom is golden and crispy.
  6. Flip the rosti over and cook for another 15 minutes, or until the other side is golden and crispy.
  7. Slide the rosti onto a plate, cut into wedges, and serve.
