Hearty White Bean Soup
A comforting and filling soup packed with white beans, vegetables, and spices.
Ingredients - Serves 6
- Salt and pepper - To taste
- Chicken or vegetable broth - 6 cups
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onion - 1 large, diced
- Olive oil - 2 tablespoons
- White beans - 2 cups, dried
Let's Get Started
- Soak the white beans in water overnight, then drain and rinse.
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the thyme, bay leaf, and broth to the pot. Bring to a boil.
- Reduce the heat to low, add the beans, and simmer for about 2 hours, or until the beans are tender.
- Season with salt and pepper to taste. Serve hot.
