Ingredients - Serves 6
- Salt and pepper - To taste
- Vegetable broth - 2 cups
- Canned black beans - 1 can (15 oz), drained and rinsed
- Canned kidney beans - 2 cans (15 oz each), drained and rinsed
- Canned diced tomatoes - 2 cans (14.5 oz each)
- Cumin - 1 tablespoon
- Chili powder - 2 tablespoons
- Garlic - 4 cloves, minced
- Bell peppers - 2, chopped
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and bell peppers and cook until softened, about 5 minutes.
