Hearty Vegetable Chili
A hearty and warming chili packed full of vegetables. Perfect for a cold day.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cumin - 1 tablespoon
- Chili powder - 2 tablespoons
- Canned kidney beans - 1 can, drained and rinsed
- Canned diced tomatoes - 2 cans
- Zucchini - 1 large, chopped
- Bell peppers - 2, chopped
- Carrots - 2, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the carrots, bell peppers, and zucchini and cook until the vegetables are tender, about 10 minutes.
- Add the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Stir to combine.
- Reduce the heat to low, cover the pot, and let the chili simmer for 45 minutes, stirring occasionally.
- Taste and adjust the seasoning if necessary. Serve hot.
