  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the carrots, bell peppers, and zucchini and cook until the vegetables are tender, about 10 minutes.
  4. Add the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Stir to combine.
  5. Reduce the heat to low, cover the pot, and let the chili simmer for 45 minutes, stirring occasionally.
