Hearty Minestrone Soup

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until the vegetables are tender, about 10 minutes.
  2. Add the zucchini, diced tomatoes, and vegetable broth to the pot. Bring to a boil.
  3. Reduce the heat to low and add the cannellini beans and pasta. Simmer until the pasta is tender, about 10 minutes.
  4. Add the spinach to the pot and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
