Hearty Minestrone Soup
A hearty, veggie-packed soup with pasta and beans, perfect for a comforting meal.
Ingredients - Serves 6
- Parmesan cheese - For serving
- Salt and pepper - To taste
- Spinach - 2 cups
- Small pasta - 1 cup
- Cannellini beans - 1 can, drained and rinsed
- Vegetable broth - 6 cups
- Canned diced tomatoes - 1 can
- Zucchini - 1, chopped
- Garlic - 3 cloves, minced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until the vegetables are tender, about 10 minutes.
- Add the zucchini, diced tomatoes, and vegetable broth to the pot. Bring to a boil.
- Reduce the heat to low and add the cannellini beans and pasta. Simmer until the pasta is tender, about 10 minutes.
- Add the spinach to the pot and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve the soup hot, topped with a sprinkle of Parmesan cheese.
