Hasselback potatoes are a Swedish dish that are a cross between baked potatoes and potato chips. They are crispy on the outside and soft on the inside.

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Slice the potatoes: Cut slits into the potato, stopping just before you cut through so that the slices stay connected at the bottom of the potato.
  3. Mix the olive oil, salt, pepper, garlic powder, and paprika together in a small bowl.
  4. Brush the potatoes with half the oil mixture, making sure to get in between all the slices.
  5. Bake for 30 minutes.
  6. Brush the potatoes with the remaining oil mixture, again getting in between all the slices.
  7. Bake for another 30 minutes, or until the potatoes are crispy on the edges and easily pierced in the middles with a knife.
  8. Sprinkle with fresh parsley before serving.
