Hasselback Potatoes
Hasselback potatoes are a Swedish dish that are a cross between baked potatoes and potato chips. They are crispy on the outside and soft on the inside.
Ingredients - Serves 4
- Fresh parsley - 1 tablespoon, chopped
- Paprika - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Potatoes - 4 large
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Slice the potatoes: Cut slits into the potato, stopping just before you cut through so that the slices stay connected at the bottom of the potato.
- Mix the olive oil, salt, pepper, garlic powder, and paprika together in a small bowl.
- Brush the potatoes with half the oil mixture, making sure to get in between all the slices.
- Bake for 30 minutes.
- Brush the potatoes with the remaining oil mixture, again getting in between all the slices.
- Bake for another 30 minutes, or until the potatoes are crispy on the edges and easily pierced in the middles with a knife.
- Sprinkle with fresh parsley before serving.
