Hasenpfeffer
Hasenpfeffer is a traditional German stew made from marinated rabbit or hare. This hearty dish is perfect for cold winter nights.
Ingredients - Serves 4
- Beef broth - 2 cups
- Butter - 2 tablespoons
- Flour - 1/2 cup
- Salt and pepper - To taste
- Juniper berries - 10
- Cloves - 6
- Bay leaves - 2
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Red wine - 2 cups
- Rabbit - 1 whole, cut into pieces
Let's Get Started
- Combine the rabbit, wine, onions, garlic, bay leaves, cloves, juniper berries, salt, and pepper in a large bowl. Cover and refrigerate for at least 12 hours.
- Remove the rabbit from the marinade and pat dry. Reserve the marinade.
- Dredge the rabbit pieces in the flour.
- Melt the butter in a large pot over medium heat. Add the rabbit pieces and brown on all sides.
- Add the reserved marinade and the beef broth to the pot. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the rabbit is tender.
- Serve the hasenpfeffer hot, with mashed potatoes or noodles on the side.
