Halibut and Vegetable Stir Fry
This delicious stir fry combines fresh halibut fillets with a variety of colorful vegetables, all tossed in a flavorful sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cooking oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Green onions - 4, sliced
- Snap peas - 1 cup
- Red bell pepper - 1, sliced
- Carrots - 2, sliced
- Broccoli florets - 2 cups
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Halibut fillets - 4 fillets
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, minced garlic, and grated ginger. Set aside.
- Season the halibut fillets with salt and pepper.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add the halibut fillets and cook for 3-4 minutes per side, or until cooked through. Remove from the skillet and set aside.
- In the same skillet, add the broccoli florets, sliced carrots, red bell pepper, snap peas, and sliced green onions. Stir fry for 5-6 minutes, or until the vegetables are crisp-tender.
- In a small bowl, whisk together cornstarch and water to make a slurry.
- Push the vegetables to one side of the skillet and pour the soy sauce mixture into the empty space.
- Pour the cornstarch slurry into the skillet and stir everything together until the sauce thickens.
- Return the cooked halibut fillets to the skillet and toss gently to coat them with the sauce and vegetables.
- Cook for an additional 1-2 minutes, or until everything is heated through.
- Serve the halibut and vegetable stir fry hot, garnished with additional sliced green onions if desired.
