Halibut and Roasted Red Pepper Relish
This delicious halibut dish is served with a flavorful roasted red pepper relish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1/2 cup, finely chopped
- Red bell peppers - 2
- Halibut fillets - 4 pieces
Let's Get Started
- Preheat the oven to 400°F.
- Place the red bell peppers on a baking sheet and roast in the oven for 20 minutes, or until the skin is charred and blistered.
- Remove the peppers from the oven and let them cool. Once cooled, peel off the skin, remove the seeds, and chop the peppers into small pieces.
- In a bowl, combine the chopped red bell peppers, red onion, minced garlic, lemon juice, olive oil, chopped parsley, salt, and pepper. Mix well to combine.
- Season the halibut fillets with salt and pepper.
- Heat a grill or grill pan over medium-high heat. Cook the halibut fillets for 4-5 minutes per side, or until cooked through and flaky.
- Serve the grilled halibut topped with the roasted red pepper relish.
