Halibut and Roasted Cherry Tomato Pasta
This delicious pasta dish features tender halibut fillets and roasted cherry tomatoes, tossed in a flavorful sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Fresh basil - 1/4 cup, chopped
- Red pepper flakes - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Pasta - 8 ounces
- Cherry tomatoes - 2 cups
- Halibut fillets - 4 fillets
Let's Get Started
- Preheat the oven to 400°F.
- Place the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes, until the tomatoes are soft and slightly caramelized.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the halibut fillets with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the halibut fillets for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, heat another tablespoon of olive oil. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes, until fragrant.
- Add the roasted cherry tomatoes to the skillet and cook for another 2-3 minutes, until heated through.
- Add the cooked pasta to the skillet and toss to coat in the tomato sauce. Cook for 1-2 minutes, until heated through.
- Divide the pasta among serving plates. Top each plate with a halibut fillet.
- Garnish with chopped fresh basil and grated Parmesan cheese.
- Serve hot and enjoy!
