Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Place the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes, until the tomatoes are soft and slightly caramelized.
  3. Cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Season the halibut fillets with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the halibut fillets for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
  5. In the same skillet, heat another tablespoon of olive oil. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes, until fragrant.
  6. Add the roasted cherry tomatoes to the skillet and cook for another 2-3 minutes, until heated through.
  7. Add the cooked pasta to the skillet and toss to coat in the tomato sauce. Cook for 1-2 minutes, until heated through.
  8. Divide the pasta among serving plates. Top each plate with a halibut fillet.
  9. Garnish with chopped fresh basil and grated Parmesan cheese.
  10. Serve hot and enjoy!
