Let's Get Started
- In a large pot, add the pork bones and water. Bring to a boil, then reduce the heat and simmer for 2 hours, skimming off any impurities that rise to the surface.
- Remove the pork bones from the broth and strain the broth through a fine mesh sieve. Discard any solids.
- Return the broth to the pot and add the minced garlic, grated ginger, soy sauce, mirin, and salt. Simmer for another 30 minutes.
- Meanwhile, cook the noodles according to the package instructions. Drain and set aside.
- In a separate pan, cook the thinly sliced pork belly until crispy and browned.
- To serve, divide the cooked noodles into bowls. Ladle the hot broth over the noodles. Top with the crispy pork belly, sliced green onions, soft-boiled eggs, and narutomaki.
- Serve hot and enjoy!
