Let's Get Started

  1. Rinse the lentils under cold water and set aside.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion, garlic, carrot, bell pepper, and chorizo sausage. Cook until the vegetables are soft and the sausage is browned.
  4. Add the tomato and potato to the pot and cook for a few more minutes.
  5. Add the lentils and beef broth to the pot. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
  7. Serve the stew hot, with crusty bread on the side if desired.
