Guiso de Lentejas
A hearty and traditional lentil stew from Argentina, perfect for cold weather.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Beef broth - 4 cups
- Chorizo sausage - 1, sliced
- Potato - 1 large, chopped
- Tomato - 1 large, chopped
- Red bell pepper - 1, chopped
- Carrot - 1 large, chopped
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Lentils - 2 cups
Let's Get Started
- Rinse the lentils under cold water and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, bell pepper, and chorizo sausage. Cook until the vegetables are soft and the sausage is browned.
- Add the tomato and potato to the pot and cook for a few more minutes.
- Add the lentils and beef broth to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
- Serve the stew hot, with crusty bread on the side if desired.
