Grilled Veggie Sandwich
This grilled veggie sandwich is packed with flavorful roasted vegetables and creamy avocado spread.
Ingredients - Serves 2
- Spinach leaves - Handful
- Bread slices - 4
- Lemon juice - 1 tablespoon
- Avocado - 1, mashed
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Red onion - 1/2, sliced
- Red bell pepper - 1, sliced
- Yellow squash - 1 medium, sliced
- Zucchini - 1 medium, sliced
Let's Get Started
- Preheat the grill or grill pan over medium heat.
- In a bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper.
- Grill the vegetables for 8-10 minutes, or until they are tender and slightly charred.
- In another bowl, mix mashed avocado with lemon juice, salt, and pepper to make the avocado spread.
- Toast the bread slices until golden brown.
- Spread the avocado mixture on one side of each bread slice.
