  1. Preheat the grill or grill pan over medium heat.
  2. In a bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables for 8-10 minutes, or until they are tender and slightly charred.
  4. In another bowl, mix mashed avocado with lemon juice, salt, and pepper to make the avocado spread.
  5. Toast the bread slices until golden brown.
  6. Spread the avocado mixture on one side of each bread slice.
  7. Layer grilled vegetables and spinach leaves on top of the avocado spread.
  8. Close the sandwich with another bread slice.
  9. Cut the sandwich in half and serve.
