Grilled Cheese and Tomato Soup
A comforting and delicious combination of grilled cheese sandwich and tomato soup.
Ingredients - Serves 2
- Salt and pepper - To taste
- Heavy cream - 1/4 cup
- Vegetable broth - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1/2, diced
- Tomato - 1, diced
- Tomato soup - 2 cups
- Butter - 2 tablespoons
- Cheddar cheese - 4 slices
- Bread - 4 slices
Let's Get Started
- In a pot, heat the butter over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the diced tomato and cook for another 2 minutes.
- Pour in the vegetable broth and tomato soup. Bring to a simmer.
- Reduce the heat and let the soup simmer for 10 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Meanwhile, preheat a skillet over medium heat.
- Take 2 slices of bread and place 2 slices of cheddar cheese between them.
- Butter the outer sides of the bread slices.
- Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted.
- Flip the sandwich and cook the other side until golden brown.
- Repeat with the remaining bread and cheese slices.
- Serve the grilled cheese sandwiches with a bowl of tomato soup for dipping.
