Grilled Cheese and Tomato Soup

Ingredients - Serves 2

Let's Get Started

  1. In a pot, heat the butter over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent.
  3. Add the diced tomato and cook for another 2 minutes.
  4. Pour in the vegetable broth and tomato soup. Bring to a simmer.
  5. Reduce the heat and let the soup simmer for 10 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Meanwhile, preheat a skillet over medium heat.
  8. Take 2 slices of bread and place 2 slices of cheddar cheese between them.
  9. Butter the outer sides of the bread slices.
  10. Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted.
  11. Flip the sandwich and cook the other side until golden brown.
  12. Repeat with the remaining bread and cheese slices.
  13. Serve the grilled cheese sandwiches with a bowl of tomato soup for dipping.
