These green pea falafel bowls are a healthy, vegan-friendly meal packed with fresh ingredients and bold flavors.
Ingredients - Serves 4
- Lemon - 1, juiced
- Avocado - 1, sliced
- Mixed greens - 4 cups
- Vegetable broth - 2 cups
- Quinoa - 1 cup
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Parsley - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Chickpeas - 1 can, drained and rinsed
- Green peas - 2 cups, frozen
Let's Get Started
- In a food processor, combine the green peas, chickpeas, garlic, parsley, cumin, salt, and pepper. Pulse until a coarse mixture forms.
- Form the mixture into small patties and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the falafel patties and cook until golden brown on both sides, about 5 minutes per side.
- While the falafel is cooking, combine the quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce the heat and simmer until the quinoa is tender and the broth is absorbed, about 15 minutes.
- To assemble the bowls, divide the mixed greens between four bowls. Top with the cooked quinoa, falafel patties, sliced avocado, and a squeeze of fresh lemon juice.
