Green Curry with Tofu
This flavorful Thai green curry is made with tofu, vegetables, and aromatic spices.
Ingredients - Serves 4
- Cooked rice - For serving
- Salt - To taste
- Lime juice - 1 tablespoon
- Brown sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Thai basil leaves - 1/4 cup, torn
- Bamboo shoots - 1/2 cup, sliced
- Mixed vegetables - 2 cups, chopped (e.g. bell peppers, broccoli, carrots)
- Firm tofu - 1 block, cubed
- Coconut milk - 1 can (400ml)
- Green curry paste - 2 tablespoons
Let's Get Started
- In a large pan, heat some oil over medium heat.
- Add the green curry paste and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir well to combine with the curry paste.
- Add the tofu, mixed vegetables, and bamboo shoots to the pan. Stir to coat them with the curry sauce.
- Cover the pan and let the curry simmer for about 15 minutes, or until the vegetables are tender.
- Stir in the Thai basil leaves, fish sauce, brown sugar, lime juice, and salt. Cook for an additional 2-3 minutes.
- Serve the green curry over cooked rice and enjoy!
