Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the pork and cook until browned on all sides.
  3. Remove the pork from the pot and set aside.
  4. In the same pot, add the onion and garlic and cook until softened.
  5. Return the pork to the pot, along with the green chilies, potatoes, chicken broth, cumin, salt, and pepper.
  6. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the pork is tender and the flavors are well combined.
