Green Chili Stew
A hearty and spicy stew made with green chilies, pork, and potatoes.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chicken broth - 4 cups
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Potatoes - 2 large, cubed
- Green chilies - 1 pound, roasted and chopped
- Pork shoulder - 1.5 pounds, cubed
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the pork and cook until browned on all sides.
- Remove the pork from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Return the pork to the pot, along with the green chilies, potatoes, chicken broth, cumin, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 2 hours, or until the pork is tender and the flavors are well combined.
