Graavilohi
Graavilohi is a traditional Finnish dish made with raw salmon cured in a mixture of salt, sugar, and dill.
Ingredients - Serves 4
- Lemon zest - 1 teaspoon
- Black pepper - 1 teaspoon
- Fresh dill - 1/4 cup, chopped
- Sugar - 1/4 cup
- Salt - 1/4 cup
- Salmon fillet - 1 pound
Let's Get Started
- In a small bowl, mix together the salt, sugar, chopped dill, black pepper, and lemon zest.
- Place the salmon fillet skin-side down on a large piece of plastic wrap.
- Spread the salt and sugar mixture evenly over the salmon, covering all sides.
- Wrap the salmon tightly in the plastic wrap and place it in a shallow dish.
- Place a weight, such as a heavy plate, on top of the wrapped salmon to press it down.
- Refrigerate the salmon for 24-48 hours, flipping it over halfway through.
- After the curing time, unwrap the salmon and scrape off the excess salt and dill mixture.
- Slice the graavilohi thinly and serve as an appetizer with bread, mustard sauce, and fresh dill.
