Ingredients - Serves 4

Let's Get Started

  1. In a small bowl, mix together the salt, sugar, chopped dill, black pepper, and lemon zest.
  2. Place the salmon fillet skin-side down on a large piece of plastic wrap.
  3. Spread the salt and sugar mixture evenly over the salmon, covering all sides.
  4. Wrap the salmon tightly in the plastic wrap and place it in a shallow dish.
  5. Place a weight, such as a heavy plate, on top of the wrapped salmon to press it down.
  6. Refrigerate the salmon for 24-48 hours, flipping it over halfway through.
  7. After the curing time, unwrap the salmon and scrape off the excess salt and dill mixture.
  8. Slice the graavilohi thinly and serve as an appetizer with bread, mustard sauce, and fresh dill.
