Let's Get Started

  1. In a large bowl, combine the flour and salt. Gradually add water and oil, kneading until a dough forms. Cover and let rest for 30 minutes.
  2. Meanwhile, in a pan, sauté the onion and garlic until soft. Add the spinach and cook until wilted. Remove from heat and stir in the feta cheese.
  3. Divide the dough into 4 pieces. On a floured surface, roll out each piece into a thin circle.
  4. Spread the spinach and feta mixture onto half of each circle, leaving a small border around the edge. Fold the dough over to enclose the filling and press the edges to seal.
  5. Heat a griddle or large frying pan over medium heat. Brush each gozleme with butter and cook for 2-3 minutes on each side, or until golden brown. Cut into slices and serve hot.
