Gozleme
Gozleme is a traditional savory Turkish flatbread and pastry dish, made of hand-rolled dough that is lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked over a griddle.
Ingredients - Serves 4
- Butter - For brushing
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Feta cheese - 1 cup, crumbled
- Spinach - 2 cups, chopped
- Olive oil - 2 tablespoons
- Water - 1 cup
- Salt - 1 teaspoon
- Plain flour - 3 cups
Let's Get Started
- In a large bowl, combine the flour and salt. Gradually add water and oil, kneading until a dough forms. Cover and let rest for 30 minutes.
- Meanwhile, in a pan, sauté the onion and garlic until soft. Add the spinach and cook until wilted. Remove from heat and stir in the feta cheese.
- Divide the dough into 4 pieces. On a floured surface, roll out each piece into a thin circle.
- Spread the spinach and feta mixture onto half of each circle, leaving a small border around the edge. Fold the dough over to enclose the filling and press the edges to seal.
- Heat a griddle or large frying pan over medium heat. Brush each gozleme with butter and cook for 2-3 minutes on each side, or until golden brown. Cut into slices and serve hot.
